Instant Pot Asian-Inspired Shrimp and Vegetable Medley

Prepare the Ingredients: Begin by peeling and deveining the large shrimp, chopping the cabbage, and measuring out the winter blend vegetables, oyster sauce, soy sauce, and chicken broth.

Sauté Mode: Turn on the Instant Pot and select the "Sauté" mode. Once it's hot, add a bit of oil if desired.

Sauté Vegetables and Shrimp: Add the chopped cabbage and winter blend vegetables to the Instant Pot. Sauté them for about 3-5 minutes until they start to soften. Then, add the peeled and deveined shrimp to the pot and sauté for an additional 2-3 minutes until the shrimp turn pink.

Add Sauces: Pour in the oyster sauce and soy sauce. Stir well to coat the vegetables and shrimp evenly.

Pour in Chicken Broth: Add the chicken broth to the pot. This will help create steam and pressure during cooking.

Pressure Cooking: Close the Instant Pot lid, making sure the pressure valve is set to "Sealing." Cancel the "Sauté" mode, and then select the "Manual" or "Pressure Cook" mode. Set the timer for 2 minutes on high pressure.

Cooking Process: The Instant Pot will take some time to come to pressure, and then it will cook for the set time. Once the cooking cycle is complete, allow for a natural release for about 5 minutes.

 

After that, you can manually release any remaining pressure by carefully turning the pressure release valve to "Venting."

Serve: Open the Instant Pot, and your Winter Blend Vegetables with Cabbage and Large Shrimp are ready to serve. You can garnish with some sesame seeds or green onions if desired.
