Prepare the Spinach:

  • Wash the spinach thoroughly and chop it into small pieces.

 

Whisk the Eggs:

  • Crack the eggs into a bowl and whisk them until the yolks and whites are well combined.

 

Mix Ingredients:

  • In the bowl with the whisked eggs, add the chopped spinach, crumbled feta cheese, salt, and pepper. Mix well.

  • Prepare Instant Pot:

  • Grease the egg bite molds with cooking spray or a small amount of butter to prevent sticking.

Fill the Molds:

  • Pour the egg mixture evenly into the egg bite molds, filling each one almost to the top.

  • Cook in Instant Pot:

  • Add 1 cup of water to the Instant Pot.

  • Place the filled egg bite mold on the Instant Pot trivet and carefully lower it into the Instant Pot.

  • Close the lid, set the Instant Pot to "Pressure Cook" or "Manual" mode, and cook for 8-10 minutes.

Release Pressure:

  • Once the cooking time is complete, allow for a natural pressure release for a few minutes, then do a quick release.

Serve:

  • Carefully remove the egg bite mold from the Instant Pot.

  • Let the egg bites cool for a minute before gently popping them out of the molds.

Whisk the Eggs:

  • Crack the eggs into a bowl and whisk them until the yolks and whites are well combined.

  • Cook the Spinach:

  • In a pan over medium heat, add olive oil or butter.

  • Add the chopped spinach to the pan and sauté until it wilts, which should only take a couple of minutes.
     

Scramble the Eggs:

  • Push the sautéed spinach to one side of the pan.

  • Pour the whisked eggs into the empty side of the pan.

  • Allow the eggs to set for a moment, and then gently scramble them with a spatula.

  • Combine Spinach and Eggs:

  • Once the eggs are mostly set, mix them with the sautéed spinach, ensuring even distribution.
     

Add Feta and Season:

  • Sprinkle the crumbled feta cheese over the eggs and spinach.

  • Season with salt and pepper to taste.

  • Finish Cooking:
