Asparagus Omelet

You Will Need

6 Eggs

1/2 Medium Onion (diced)

1 tsp salt

1/4 tsp pepper

1 tsp Garlic Powder

2 TBSP Oil

2 TSP Butter

1 Cup  fresh Asparagus 

1/2 cup shredded cheese

In a bowl whisk eggs, salt and pepper, and garlic powder, Dice onion, and chop Asparagus.

When asparagus is in season, it makes an appearance at almost all of my meals. It tastes fantastic in this cheese omelette. 

Add oil to frying pan along with butter turn  heat to medium and wait for butter to melt. Saute onion and asparagus until slightly browned (about 15 to 20 min) Wait for eggs to turn white on the bottom and bubbly on the top before turning.

Asparagus omelet is pretty popular in the spring and if you know where to look you can actually find wild asparagus in both mountainous and seaside locations. I love picking wild asparagus in the spring with my sister in Colorado. It grows on the sides of the roads. Good exercise and good food and good company!

Bagel with Cream Cheese

Bacon

Sausage

Wait till bottom is almost solid. and flip in sections. (6 to 8 min) Salt and Pepper to taste

Do you need to peel Asparagus?

Be careful of any recipe that instructs you to peel asparagus before cooking it. Not only is it labor-intensive, it's really not necessary.  as long as you get rid of the bottom portion of the stalk, the rest is entirely edible.

When Eggs are almost done, top with cheese if desired.
