huevos rancheros
Loaded Ranchero Huevos is meant to share, crispy fried potatoes, sauteed onions, eggs and salsa. Topped with Avocado and cheese. This recipe is sure to impress boyfriends, girlfriends, husbands etc. Enjoy!~
You Will Need
3 sm/med red potatoes
3 eggs
2 TBSP Oil
4 TBSP Butter (divided)
1 small/med yellow onion
1 1/2 Cup Thick and Chunky Salsa
1 to 1/2 Avocado (sliced)
Jalapenos
Shredded Cheese
1 Tortilla
Salt and Pepper to taste

Butter Both sides of tortilla and brown both sides in a skillet.
Add 2 TBSP oil and 2 Tbsp Butter to the same pan. Cut red potatoes in circles and fry both sides Salt and pepper both sides of your potatoes. Move to a paper towel when done to remove excess oil. Drain oil and wipe pan with a paper towel. Next Sautee your onions. You can do both together but I didn't.
Add your favorite thick and chunky salsa to the pan, wait till bubbly and add your eggs.
Note: I don't like sunny side up eggs, so I placed a lid on till they were the way I wanted them, but my son loves them so I would do them without the lid for him. It's just your preference.

Lay tortilla on a plate, and place potatoes around the edges (as pictured)
Place eggs and salsa into the center of your tortilla. (Save enough salsa to add to the top) Slice Avocado and line on top of potatoes along with Jalapenos, (if you cooked your onions separate, group in the upper part of the tortilla spreading them out a little.) Sprinkle with cheese . Place in the microwave for 30 to 40 seconds to melt cheese and heat avocado. Serve hot and Enjoy!~
