Biscuits and Sausage Gravy

You will need:

1 pound sausage

1/2 cup vegetable oil

1/4 cup flour

3 cups of milk

1 cup heavy cream

1 tsp salt

1 tsp pepper

If you want it thicker mix 2 TBS flour to 4 TBS water and mix well. This is what we do.

Instant Pot Creamy Sausage Gravy:

  1. Set your Instant Pot to the "Sauté" mode. Add the sausage and cook until browned and crumbled. Use a slotted spoon to remove the cooked sausage and set aside.

  2. In the same Instant Pot, carefully drain excess grease, leaving about 2 tablespoons in the pot. Add the vegetable oil and flour, whisking constantly to create a roux. Continue to cook the roux for about 2-3 minutes, until it's lightly golden in color.

  3. Gradually pour in the milk and heavy cream, while continuing to whisk to prevent any lumps from forming. Add the salt and pepper, and stir well.

  4. Return the cooked sausage to the Instant Pot, stirring to combine it with the creamy mixture.

  5. If you prefer a thicker gravy, mix the 2 tablespoons of flour and 4 tablespoons of water in a separate bowl until smooth. Stir this thickening mixture into the gravy.

  6. Cancel the "Sauté" mode on the Instant Pot and secure the lid. Set the Instant Pot to "Manual" or "Pressure Cook" mode on high for 5 minutes.

  7. Once the cooking time is complete, allow for a natural release of pressure for about 5 minutes, then carefully perform a quick release to release any remaining pressure.

  8. Carefully open the lid and give the gravy a good stir. Taste and adjust seasoning if necessary.

  9. Serve the creamy sausage gravy over freshly baked biscuits, mashed potatoes, or your favorite breakfast dish. Enjoy the comforting flavors of this Southern classic!
