You Will Need

  • 2 Scrambled Eggs

  • 2 Small Avocados

  • 1 Hot Dog Bun

  • 1/8 tsp Salt

  • 1/8 tsp Pepper

  • Butter

  • 1/4 cup Shredded Cheese (of your choice)

  • Salsa (for serving)

  • Coffee (for serving)

How To Make Cheesy Scrambled Egg
and Avocado Breakfast Sandwich

  1. Prepare the Hot Dog Bun:

  2. Open up the hot dog bun and spread butter on both sides of the bun.

  3. Toast the Bun:

  4. Place the buttered hot dog bun in a skillet over medium heat.

  5. Cook the bun until both sides are golden brown and crispy. Remove from the skillet and set aside.

  6. Mash the Avocado:

  7. In a bowl, scoop out the flesh of the avocados and mash them using a fork.

  8. Add 1/8 teaspoon of salt and 1/8 teaspoon of pepper to the mashed avocado. Mix well to combine.

  9. Scramble the Eggs:

  10. Crack 2 eggs into a bowl and whisk them together.

  11. Heat a non-stick skillet over medium heat and add a small amount of butter.

  12. Pour the whisked eggs into the skillet.

  13. Sprinkle a pinch of salt and pepper to taste over the eggs.

  14. Gently scramble the eggs with a spatula, cooking until they are set and as done as you like them.

  15. Assemble the Sandwich:

  16. Place the toasted hot dog bun on a serving plate.

  17. Spread Avocado on Bun:

  18. Spread the mashed avocado mixture evenly on the inside of the toasted hot dog bun.

  19. Add the Scrambled Eggs:

  20. Spoon the scrambled eggs on top of the mashed avocado.

  21. Melt the Cheese:

  22. Sprinkle 1/4 cup of shredded cheese over the scrambled eggs.

  23. Melt the Cheese:

  24. The Eggs should be hot enough to melt the cheese, but if not, place in the microwave for 20 to 30 seconds or until cheese melts.

  25. Serve:

  26. Serve the sandwich with salsa on the side for added flavor.
