 Bourbon Whisky Chicken

You Will Need

4 Chicken thighs (you can also use Chicken breast)
2 TBS olive oil
2 TBS Italian Seasoning Mixture
1/3 Cup Soy Sauce
 1 Cup Brown Sugar
1 TBS Minced Garlic
1/4 Cup Bourbon
2 TBS Ketchup
1/2 Cup Water
1 TBS Jalapenos~ (or 1/4 ts red pepper flakes)
1/4 Cup Apple Cider Vinegar
2 TBS Corn Starch
2 TBS Water

This instant pot one-pot wonder is seriously amazing! I can't say enough about it. I made 4 pieces and all were gone the same night. (There is only the two of us at home!) Is there alcohol in bourbon chicken?

This recipe does call for bourbon, hence the name. The alcohol evaporates as the sauce simmers, but if you prefer not to use alcohol, you can substitute apple juice and it'll still be delicious.

Directions

  • Start by putting olive oil into your instant pot

  • Turn the saute on and coat chicken with 2 TBS Italian Seasoning Mixture

  • Lightly brown chicken on both sides

  • Midway, empty your excess water out of your instant pot, (it's fine it will DE-glaze later)

  • Once browned on both sides, remove chicken and set aside on a plate

  • To your instant pot, add soy sauce, brown sugar, garlic, Bourbon, Ketchup, 1/2 cup water Jalapenos~ (or red pepper flakes) apple cider vinegar

  • Mix well and return chicken to the pot

  • Make sure each piece is covered with liquid

  • Place your lid on, make sure you are on sealing and not venting

  • Then press manual or pressure cook for 20 min high pressure

  • Once your pressure valve goes down, turn the lid to open

  • Remove chicken to another platter

  • Add 2 TBS Corn Starch to 2 TBS water to your liquid, stir until thickened

 

This dish is amazing over rice.
