Easy Ricotta Cheese Filling

Making Ricotta  Cheese is easy, and so is the filling you need for pasta dishes, like lasagna  ravioli, tortellini, and other filled kinds of pasta. There is nothing like fresh ricotta, but this recipes is also for store bought too. "No worries."

Ricotta Cheese Filling

2 Cups Ricotta (Make your own)

2 Eggs

1/2 Cup Powdered Parmesan Cheese

1/4 Cup Parsley

Note: Leave out the egg in this recipe for a nice cheese spread for crackers, it's delicious!

 

How long will fresh Ricotta Cheese Last?: 

 

Fresh ricotta can be used right away or refrigerated in an airtight container for up to one week.

Combine Ricotta Cheese (or if using store bought) with eggs, Parmesan, and parsley. Mix well.

This Ricotta Filling is so easy to make, yet it adds a tremendous amount of flavor to pasta dishes rather than just using plain ricotta.

Is Ricotta Cheese Healthy?


Compared to most cheeses, ricotta is a healthier choice, because it contains less salt and fat.  It's light and creamy with a slightly grainy texture with unique  flavor that can be used on its own or in sweet and savory dishes. Homemade Ricotta is so much better then store bought, but most things that are homemade are.

What Can you do with Sweet Whey
 

You can use sweet whey the same way you use acid whey, in addition to these ways below:

  • Add it to smoothies and shakes to provide more vitamins, minerals, and proteins.

  • Use as cooking liquid for potatoes, rice, grits, pasta, and grains. You can also replace the water when making dinner rolls or breads with equal amounts of whey.

  • Drink it straight!

  • Make lacto-fermented drinks such as limeades.

  • Put it in your compost pile. It adds nutrients and makes thick, black compost.

  • Use in homemade dog food, or pour a TBSP over dry dog food for great nutrition for your dog. Don't use to much as it interrupts their digestion if you use to much.

 

Whey can be placed in a covered container in the refrigerator, where it will keep for several months. It can also be frozen in ice cube trays and used at a much later date.
