Loaded Bacon, Mushroom and onion Pork loin
This loaded bacon, onion and mushroom pork loin is a comfort food you will want again and again. It's over the top crazy good! The bacon gravy just sets off the whole dish. Try it with our loaded bacon and onion mashed potatoes YUM! Comfort food at its best!

Start by cutting your pork loin in half, season with our zesty Italian Seasoning. Turn your saute on and, sear on all sides until browned. Add chicken Broth, Place your lid on, (make sure you are on sealing and not venting.) Set timer for 25 minutes, with a 10 min natural release, then instant release.

While pork is cooking, fry bacon. You can either do this in another instant pot, or on the stove top. (dice into bite sized pieces) I did mine on the stove top.

Remove pork from instant pot, and slice (reserve liquid in another bowl)

Turn your saute on and add butter, onions, garlic and mushrooms, saute until onions are translucent. Add reserved broth, bacon, cream of bacon, cream of mushroom, salt, pepper, (mix well) Add corn starch and water until thickened. (stir while thickening) Ladle gravy over sliced pork loin, make our loaded mashed potatoes and ENJOY!


You Will Need
For the Pork:
1 Pork Loin
2 Cups Chicken Broth
3 TBSP of our zesty Italian Seasoning
4 TBSP Butter
For the Gravy:
1 Can Cream of Mushroom Soup
1 Can Cream of Bacon Soup
2 (6.5 oz) cans mushrooms
1 Small Onion (diced)
2 TBSP Minced Garlic
2 TBSP Butter
1/2 Pound Bacon (cut into bite sized pieces)
1 tsp Salt
1/4 tsp Pepper
4 TBSP Corn Starch
4 TBSP Water
