During each summer, I would visit my grandparents, with me in Phoenix and them in Tulsa. Every year, my grandmother prepared these unique sandwiches. I'm not entirely sure if they originated from the Great Depression era, but my sister and I would practically beg for them.

I distinctly recall the first time we encountered these sandwiches. I was around four years old, and at that time, I believed I didn't like onions. My grandmother, with her gentle persuasion, would talk about how wonderful these sandwiches were and how tirelessly my grandpa had toiled in the garden just so we could savor them. Maybe it was a twinge of guilt that pushed me to try them with onions, but I did, and to my astonishment, I absolutely loved them!

"Just give them a chance once," my grandmother would say, "and you'll be as smitten as I was at your age!" It's worth noting that for years, these sandwiches were the only thing that could make me willingly eat onions.

You Will Need

  • 2 slices of bread

  • 2 tablespoons of peanut butter (adjust to taste)

  • 2 tablespoons of mayonnaise salad dressing (optional)

  • 1 tomato, thinly sliced (store the remaining)

  • 1 small onion, thinly sliced (store the remaining)

  • Salt, to taste

  • Pepper, to taste

How To Make Peanut Butter, Tomato and Onion Sandwich

  • Prepare Your Bread: Lay out the two slices of bread and place them in a toaster. Toast them until they reach your desired level of crispiness.

  • Spread Peanut Butter: Take one slice of the toasted bread and spread a generous layer of peanut butter evenly across it. Adjust the amount to suit your taste preferences.

  • Optional Mayo Spread: If you choose to use mayonnaise salad dressing, spread it on the second slice of toasted bread evenly.

  • Layer with Tomato and Onion: Place the thinly sliced tomatoes on the peanut butter-covered slice of toasted bread. Sprinkle a pinch of salt and pepper over the tomato slices.

  • Add Sliced Onion: Now, add the thinly sliced onions on top of the tomatoes.

  • Cut and Serve: If you prefer, you can cut the sandwich diagonally to make two triangular halves. This step is optional but can make the sandwich easier to handle and eat.
