Meatball/Ranch Potato Casserole

This casserole is the ultimate crowd-pleaser – Tender Meatballs over creamy Ranch mashed potatoes topped with cheese.  My favorite words to hear from my grown kids... Mom this is a keeper! On the table in 30 minutes.


 For The Mashed Potatoes

2 Packages Ranch 1oz Dressing

1/2 Box Hungry Jack Potato Flakes

1  and 1 /2 Sticks Butter

3/4 Cups Sour  Cream

1 Package Cream Cheese 

1 Medium Sauce Pan Water

1 1/2 tsp Salt

1/2 tsp Pepper 

1 Cup Shredded Cheese 

 For The Meatballs

  1 32oz package of Homestyle Frozen Meatballs

6 TBSP Oil

1 1/2 tsp Garlic Salt

1/2 tsp Pepper

Make Mash Potatoes in a large pot, add all ingredients (except shredded cheese) and mix well,  place in a medium casserole dish. (set aside)

I defrosted my meatballs 10 min in the microwave. Placed the entire bag in a large bowl, then added the oil, and garlic salt and pepper.  Poke them down into your mashed potatoes, add as many as you can fit. In another casserole dish add remaining meatballs.  (cover both dishes with foil) and bake for 20 minutes. Uncover  top mashed potatoes with shredded cheese, place both casserole dishes into the oven on broil for 8 to 10 minutes until both are golden brown.  I served this with frozen vegetables. it was delicious! and easy!
