4 to 5 pound whole chicken

2 TBSP Olive Oil

For The Stuffing-

1 Box Stove Top Chicken stuffing

4 Cups Bone Broth

Chicken Giblets

1 Cup Celery

1/2 Stick Butter

1 Small Onion (diced)

For The Rub-

3 TBSP Hickory Smoked Bacon Seasoning

1 TBSP Garlic Powder

1 TBSP Smoked Paprika

1 tsp Basil

2 tsp Salt

1 tsp Pepper

1 tsp Onion Powder

2 tsp Thyme

 How to make Instant Pot
 
Herb-Roasted Whole Chicken with Savory Stuffing

  • Start by washing the whole chicken inside and out, and be sure to remove the giblets from the cavity.

  • In a pan on the stove, combine the bone broth, chicken giblets, diced celery, butter, and the small diced onion. Bring it to a boil and then reduce the heat to a simmer until the vegetables are almost translucent.

  • In a bowl, empty the contents of the Stove Top Chicken stuffing. When the vegetables are done, strain the celery and onion mixture (dice up the giblets) and add them to the bowl with the stuffing.

  • Add 1 1/2 cups of the prepared bone broth to the stuffing mixture and mix well, fluffing with a fork. Set aside the remaining bone broth for later use.

  • In another bowl, combine the Hickory Smoked Bacon Seasoning, garlic powder, smoked paprika, basil, salt, pepper, onion powder, and thyme to create the rub for the chicken.

  • Rub the entire chicken, both inside and out, with olive oil.

  • Generously rub the chicken, inside and out, with the prepared rub mixture, ensuring it's evenly coated.

  • Stuff the seasoned chicken with the prepared stuffing mixture. If you have a 5-pound chicken, the whole box of stuffing should fit nicely in both cavities of your chicken.

  • Place the remaining bone broth in the bottom of your instant pot.

  • Insert a trivet into your instant pot, and carefully place the stuffed chicken inside, with the largest cavity upwards.

  • Place the lid on the instant pot, turn it to the sealing position (not venting).

  • Set your timer for 40 minutes with a 15-minute natural release.

  • When the cooking cycle is complete, remove the chicken from the instant pot (you can use two spatulas) and broil it for 7 minutes or until it reaches your desired level of browning.

  • Note: I removed the top rack in my oven and set the bottom rack 2 levels from the bottom to broil for 7 minutes. After broiling, you can cover the chicken with foil and let it rest for 10 minutes. You can also strain the broth in your instant pot to make a rich gravy.

  • Preheat your oven to 350°F (175°C).

  • Place the stuffed chicken in a roasting pan, breast side up.

  • Roasting the Chicken:

  • How Long to Bake a Whole Chicken at 350 F Based on the Weight of the Chicken:

 

3-pound chicken: 3 x 20 = 60 minutes

4-pound chicken: 4 x 20 = 80 minutes

5-pound chicken: 5 x 20 = 100 minutes

6-pound chicken: 6 x 20 = 120 minutes

7-pound chicken: 7 x 20 = 140 minutes

8-pound chicken: 8 x 20 = 160 minutes​

  • Check the internal temperature of the chicken using a meat thermometer. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh.

  • Once the chicken is fully cooked, remove it from the oven and let it rest for about 10-15 minutes before carving.
