Ingredients:

For the Tenderloin:

  • 2 pounds beef tenderloin

  • Salt and black pepper to taste

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary


For the Gravy:

  • 2 tablespoons butter

  • 2-3 tablespoons all-purpose flour (adjust for desired thickness)

  • 2 cups beef broth

  • 1/2 cup red wine (optional)

  • Salt and black pepper to taste

  • 1 teaspoon Worcestershire sauce


Here are some tips to adjust the thickness of the gravy:


Increase Flour: If you want a thicker gravy, you can increase the amount of flour in the roux. Add an extra tablespoon of flour and whisk it in until well combined with the melted butter.

Reduce Liquid: If the gravy is too thin, you can reduce the amount of beef broth and wine. Add the liquid gradually and stop when you reach your desired thickness.

Simmer Longer: Let the gravy simmer on the stovetop for a longer time. This allows the flour to fully thicken the liquid. Just be sure to stir occasionally to prevent sticking.

Cornstarch Slurry: Alternatively, you can create a slurry by mixing 1-2 tablespoons of cornstarch with a small amount of cold water. Stir this mixture into the simmering gravy and let it cook for a few minutes until thickened.

🔥 Sear the Tenderloin: In an oven-safe skillet or pan, heat olive oil over medium-high heat. Sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.
