🐔For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • Salt and black pepper to taste

🥗For the Salad:

  • Mixed salad greens (spinach, arugula, and/or romaine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1/2 red onion, thinly sliced

  • 1/4 cup feta cheese, crumbled (optional)

  • 1/4 cup Kalamata olives, pitted and sliced (optional)

🍶For the Vinaigrette Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • 1 teaspoon honey or maple syrup (optional, for sweetness)

  • Salt and black pepper to taste

🍗Grilled Chicken:

  • Preheat the grill or grill pan over medium-high heat.

  • In a small bowl, mix olive oil, dried oregano, garlic powder, salt, and black pepper to create a marinade.

  • Coat the chicken breasts with the marinade on both sides.

  • Grill the chicken for about 6-8 minutes per side or until fully cooked (internal temperature reaches 165°F or 74°C).

  • Let the grilled chicken rest for a few minutes before slicing it into thin strips.
