Beef or Pork- Instant Pot or Stove top Calabacitas

You Will Need

1 Medium Onion
2 medium zucchini (you can use all types of squash in this recipe and still get amazing results)
1 can corn
1 8 oz can of tomato sauce
1 can 14.5 ounce

diced tomatoes drained
2 tsp Italian Seasoning
1 tsp Garlic Salt
2 tsp Minced Garlic
1/2 Stick of butter
3/4 tsp pepper
1/2 tsp salt 
1/2 Cup Water

1 Cup Shredded Cheese (divided)

Have you ever tried Calabacitas? It's a great Mexican side dish that goes with almost any meal. It's so easy, Tasty corn, zucchini, Tomatoes, and onion and don't forget the cheese! Pair it up with our Garlic Butter Parmesan Chicken Wings, Bourbon Chicken or our Meatloaf bowls with cheesy ranch potatoes! Want to use it as a main dish? Saute ground beef or pork  (1 pound) and add it to this recipe.) Instructions below!

Instant Pot Calabacitas

1. Start by placing your instant pot on saute~ 

2. add butter, minced garlic, Zucchini, onion, (saute~ until slightly brown.)

3. Add diced tomatoes and corn, Add the rest of your ingredients, 

4. Turn your saute~ off.  

5. Add water, Place your lid on your instant pot,

set it to sealing and not venting,

6. Manual 5 minutes, wait for 5 minutes, then do an instant release. 

7. Once your pressure valve goes down, open your lid away from you. Add 1/2 cup of cheese)

8. Then place in an oven-safe dish, and add 1/2 cup of cheese to the top, 

9. Broil for 3 minutes 

(Till your cheese is melted and slightly browned on top)

Stove Top Calabacitas

1. Start turning your heat to turning your heat to medium on your stove top. In a large pan

2. Add butter, minced garlic, Zucchini, onion, (saute~ until slightly brown.)

3. Add diced tomatoes and corn, Add the rest of your ingredients,    

7. When browned slightly add 1/2 cup of cheese and stir, (all liquid will be almost gone)

8. Then place in an oven-safe dish, and add 1/2 cup of cheese to the top, 

9. Broil for 3 minutes 

(Till your cheese is melted and slightly browned on top)

Beef or Pork Calabacitas

1. Cut Beef or pork into bite sized pieces and brown in skillet (or saute in your instant pot)

2. Drain and set aside

3. Continue with directions, adding meat before adding cheese and mixing it all.

4. Then follow oven directions and broiling.

To make spicy calabacitas, add 1/4 tsp Cayenne Pepper (or) 2 TBSP chopped Jalapeno peppers
