Mexican Street Corn

Mexican Street Corn Casserole Recipe

Mexican Street Corn is a family favorite. There is a flea market by my daughters house and they have the best street corn we have ever had. This canned corn verision is almost the exact same with that great flavor we all love. You can also mix the mix together and use for grilled corn on the cob. 

You Will Need

3 Cans Corn

1 Cup Crema (or sour cream)

3 TBSP Real Mayo

3 TBSP Lime Juice

1/4 Cup Chopped Cilantro

1 Cup CotiJa Cheese

1 1/2 tsp Salt

1/2 tsp Pepper

Sprinkle with Tajin Seasoning (optional)

  1. In a mixing bowl add your sour cream, mayo and cotija cheese   and mix well.

  2. Then add your lime juice, Paprika, garlic powder, salt and pepper

  3. Chop Cilantro finley and add to the bowl  (mix well)

  1.  Cook your corn to desired likeness, (I boiled mine)

  2. When corn is cooked add your mix and enjoy. 

  3. Sprinkle with Tajin Seasoning (optional)
