Breakfast Recipes

Directions

Butter Both sides of tortilla and brown both sides in a skillet.

Add 2 TBSP oil and 2 Tbsp  Butter to the same pan. Cut red potatoes in circles and fry both sides Salt and pepper both sides of your potatoes. Move to a paper towel when done to remove excess oil. Drain oil and wipe pan with a paper towel. Next Sautee your onions. You can do both together but I didn't.

Add your favorite thick and chunky salsa to the pan, wait till bubbly and add your eggs.

Note:  I don't like sunny side up eggs, so I placed a lid on till they were the way I wanted them, but my son loves them so I would do them without the lid for him. It's just your preference.

Place eggs and salsa into the center of your tortilla. (Save enough salsa to add to the top) Slice Avocado  and line on top of potatoes along with Jalapenos, (if you cooked your onions separate, group in the upper part of the tortilla spreading them out a little.)  Sprinkle with cheese .  Place in the microwave for 30 to 40 seconds to melt cheese and heat avocado. Serve hot and Enjoy!~

How to Make the Best Huevos Rancheros

Ranchero Huevos is a dish with Mexican origins, typically featuring eggs served with a spicy tomato-based sauce. While the basic concept remains the same, there can be variations in ingredients and preparation. Here are some different types of Ranchero Huevos you might come across:

  1. Classic Ranchero Huevos: This version features fried or poached eggs served on a bed of sautéed potatoes, topped with a spicy tomato and chili pepper sauce, and garnished with cilantro and queso fresco.

  2. Huevos Rancheros with Refried Beans: This variation adds a layer of creamy refried beans to the plate alongside the eggs and is often served with warm tortillas on the side.

  3. Huevos Divorciados: "Divorced eggs" are two eggs served side by side, each with a different sauce—one red (spicy tomato-based) and the other green (made with tomatillos and green chilies).

  4. Breakfast Burrito Ranchero: This version wraps the Ranchero Huevos in a flour tortilla with additional ingredients such as avocado, cheese, and sometimes rice or beans.

  5. Ranchero Huevos with Chorizo: This variation adds crumbled Mexican chorizo sausage to the tomato sauce for an extra burst of flavor and spice.

  6. Ranchero Huevos with Guacamole: Instead of plain avocado slices, this version incorporates guacamole as a topping for the eggs.

  7. Baked Ranchero Huevos: Eggs are baked in the spicy tomato sauce, creating a one-pan dish that's perfect for feeding a crowd.

  8. Ranchero Huevos Benedict: A creative twist that replaces the traditional English muffin in Eggs Benedict with cornbread or a tortilla, topped with poached eggs and the spicy sauce.

  9. Vegetarian Ranchero Huevos: This version omits the meat and adds additional veggies like bell peppers, corn, or zucchini to the sauce or as a side.

Remember that the specific ingredients and preparation can vary depending on regional and personal preferences. Whether you like it spicy, mild, with meat or vegetarian, Ranchero Huevos offers a delicious and versatile dish to suit a variety of tastes.
