Jalapeno, Cheddar and onion Corn Bread

Instant Pot Directions

Follow Directions for making batter below, Spoon batter into half sized bunt pan sprayed with non-stick spray. (I did not cover the pan with foil.)

Pour 1 cup of water into the pressure cooker and place the trivet in the bottom. Put the bunt pan on the trivet. (Use a sling to help make removing the bunt pan easier.)

Lock the lid in place. Select High Pressure and set the timer for 20 minutes. When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes and then do a quick pressure release to release any remaining pressure. When valve pin drops carefully remove lid.

Remove the bunt pan to a wire rack, cover top with cheese, let  cool uncovered for 5 minutes. After 5 minutes, gently loosen edges, remove from pan and slice. Enjoy!~ You  can also flip while hot (loosen edges) and then cover with cheese.

Note:  You can also do these in the egg bite molds-  fill each mold with half batter, sprinkle cheese, and put a layer of batter on top. 6 minutes on high then quick release.

This Jalapeno, sweet onion, cheddar cornbread is so good! I made our pork chili and I asked my husband if he wanted corn bread to go with it, he said if you do make Jalapeno Corn Bread... and this recipe was born. I was just shocked at how really Delicious this corn bread came out. My husband was never a fan of corn bread, he barely would eat it when I did make it.  (however,  I love corn bread!) but when I made this, he ate almost all of it, I got 2 pieces LOL! Needless to say this is the way I will be making it from now on. Enjoy!~ we sure did!

Next, add milk and mix well

Spray a 8x8 baking pan with Cooking Spray

Spread half your corn bread down, and cover with cheese, then put the rest in the center on top

Cover with aluminum foil and bake on 350 for 20 min, uncover, and bake for additional 10 to 15 min (until top is golden brown)

You Will Need

1 Package Jiffy Corn Bread

2 TBSP Jalapeno's (diced)

1/2 Small Onion

1/3 Cup Milk

1 Egg (large)

1/2 Cup Shredded Cheddar Cheese

Directions

1. Dice Jalapeno's and onion, add to corn bread mix. Along with large egg

2. Next, add milk and mix well 

3.Spray a 8x8 baking pan with Cooking Spray 

4. Spread half your corn bread down, and cover with cheese, then put the rest in the center on top. Spread out.

5. Cover with aluminum foil and bake on 350 for 20 min, uncover, and bake for additional 10 to 15 min (until top is golden brown)
