Crab Ricotta Cheese Appetizers

On the night of your party, the ricotta can be piped  over Ritz Crackers  then topped with imitation crab. You can either assemble the appetizers yourself and arrange them on a platter, or you can arrange the Ritz Crackers, Ricotta and toppings on a tray and let your guests build their own. If making them  yourself, try pipping them onto the crackers for that finished beautiful look. The Ricotta cheese can be made the day before your party and served cold. It beats any store bought version. Even as a cold appetizer, this appetizer will surly warm the hearts of all those that attend leaving them wanting more.

Homemade Ricotta Cheese

4 Cups Whole Milk

1 Cup Heavy Cream

1 tsp Salt

1/4 Cup Lemon Juice




​I used Garlic Butter Ritz Crackers and imitation crab meat

Makes 2 Cups


How long will fresh Ricotta Cheese Last?: 


Fresh ricotta can be used right away or refrigerated in an airtight container for up to one week.

Seasonings & Directions

1 tsp Garlic Salt

1/2 cup Parmesan Cheese

1/4 cup Parsley flakes

1 tsp cilantro

1/4 tsp pepper

Pipe onto Ritz Crackers, then cut imitation crab into bite sized pieces and place on top of Ricotta Cheese, top Appetizers with salt and pepper and chives or Basil


Note: you can even sprinkle with smoked Paprika!

What can you make with Ricotta Cheese?

  • Pasta

  • Fold it into scrambled eggs

  • Stuff things!

  • Add a few spices, and put on crackers

  • dollop it on Pizza

  • Homemade Lasagna

Combine milk, salt and cream in medium pot. Place pot over high heat. Stir almost constantly as mixture heats. When it comes to a boil add lemon juice. Turn off heat and let sit undisturbed for 15 min.

Line a strainer with 2 or 3 paper towels, and place over a large bowl,  poor slowly into strainer.

Homemade Ricotta Cheese

Let strain until you can form a ball with your Ricotta. Drain the curds for up to 60 minutes: depending on how wet or dry you prefer your ricotta. The whey will drip into the larger bowl.  Press gently, releasing some liquid (don't press out too much liquid or cheese may be dry). Return ball of cheese to colander and let rest 20 minutes.

how long does fresh Ricotta Cheese last?

Refrigerate 4 to 5 days

Transfer the ricotta to an air tight container, The ricotta is best used 4 to 5 days after making it, but in our home, it never last that long!

Ricotta cheese that's been frozen is better for use in recipes for baked goods, (like Lasagna) but you won't be able to eat it as fresh, because it will contain more water than the fresh Ricotta Cheese. You can always strain any excess water after freezing.
