
Sugar Free Cinnamon Almonds

Sugar Free Cinnamon Almonds are super easy to make and include only 5 ingredients, and as far as my 8 year old granddaughter was concerned, she gave them a huge "thumbs up!" They are both sweet and salty. It's not often you get a healthy treat that taste great too! These are perfect for long car drives, plane rides, just a great travailing food in general. Store and carry in zip lock bags for easy convivence. These can also be frozen, for a cool snack idea for the summer, or simply add them on top of other foods you love.
You will Need
6 cups raw almonds you can substitute pecans, cashews, peanuts
4 cups Swerve Brown Sugar (divided)
2 teaspoon Salt
1 cup Water
2 teaspoons Ground Cinnamon

Directions-

In a deep pot, bring nuts, 2 Cups swerve, water, and cinnamon salt to a boil.

Reduce heat to a low boil and cook stirring until syrup mixture has caramelized and the nuts are well coated.

This will take around 10 to 12 minutes.

Add 2 cups of Swerve to a medium bowl and add nuts and mix well (no liquid)
Immediately spread nuts on a cookie sheet and spread into a single layer. -
Lightly Salt evenly.

Bake in a 300-degree oven for 10 minutes. Stir and bake for an additional 8 minutes.
Remove from oven, stir and allow to cool on a wire rack. Store in zip lock bags or an airtight container. -
This cinnamon roasted almonds recipe makes a lot of nuts. I always make the full recipe and enjoy some, then freeze and save the rest for later. I like to have them on hand to pull out and use on salads or eat as a snack. They’re freezer-friendly so you can make a batch and enjoy them for months. Great for sugar free ice cream, or try some on top of our homemade yogurt.
How to freeze Candied Cinnamon Sugar Almonds:

Let roasted almonds cool completely

Transfer to a freezer-friendly, airtight container.

Store in the freezer for up to 3 months.

Let thaw at room temperature and enjoy! They thaw very quickly, and even taste great frozen!
