Minestrone Soup Ingredients:
2 tablespoons olive oil
1 pound original premium sausage (or Hamburger)
1 medium onion, diced
2 cloves garlic. minced
1 cup frozen sliced carrots (slices cut in half)
1 medium zucchini, diced
1 large potato, peeled and diced
1 can (14.5 oz) fire roasted diced tomatoes
8 cups vegetable or beef broth
1 can (15 oz) red kidney beans, drained and rinsed
1 can canned green beans, drained
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 tablespoon salt
1/4 teaspoon black pepper
1/4 cup fresh basil leaves, chopped
Grated Parmesan cheese, for serving (optional)

Recipe Instructions:
Brown the Sausage: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and cook until browned, breaking it up with a spoon as it cooks. Once browned, transfer the sausage to a plate using a slotted spoon, leaving the fat in the pot.
Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the pot. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for another 1 minute.
Add Vegetables: Stir in the frozen sliced carrots, diced zucchini, and diced potato. Sauté for about 5-7 minutes until the vegetables begin to soften.
Add Tomatoes and Seasonings: Return the browned sausage to the pot. Add the canned diced tomatoes (with their juice), dried thyme, dried basil, salt, and pepper. Stir well to combine.
