1 lb Elbow Macaroni
2 cups cooked and shredded chicken (rotisserie chicken works well)
1 cup buffalo sauce
1/2 cup unsalted butter
1/2 cup all-purpose flour
4 cups milk
3 cups shredded Fiesta cheese (or a blend of Mexican cheeses)
1 cup shredded mozzarella cheese (plus 1/4 cup for garnish)
1 cup shredded Parmesan cheese (plus 1/4 cup for garnish)
Fresh parsley, chopped (for garnish)

Buffalo Chicken Mac and Cheese Bake Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook the Macaroni:
Cook the elbow macaroni according to the package instructions. Drain and set aside.
Prepare the Cheese Sauce:
In a large saucepan, melt the butter over medium heat.
Once melted, add the flour and whisk continuously to form a roux. Cook for 1-2 minutes until it becomes lightly golden.
Gradually whisk in the milk, ensuring there are no lumps. Cook, stirring constantly, until the mixture thickens (about 5-7 minutes).
Reduce the heat to low, then add the shredded Fiesta cheese, mozzarella (reserve 1/4 cup for garnish), and Parmesan cheeses (reserve 1/4 cup for garnish). Stir until the cheese is melted, and the sauce is smooth.
Add Buffalo Sauce and Chicken:
Stir in the buffalo sauce and shredded chicken. Season with salt and pepper to taste.
Combine with Macaroni:
Add the cooked macaroni to the cheese and chicken mixture, stirring until everything is well combined.
Transfer to Baking Dish:
Transfer the mixture to a greased 9x13 inch baking dish.
