I was given this recipe by a friend/subscriber to my channel and it's her recipe (June Moore) but she asked me to try it. I don't do keto but I like to make recipes because my daughter does.  I was shocked at this bread, it doesn't taste at all like peanut butter, but is so flakey and has a nutty flavor. This bread is also held together well and can be toasted and topped with your favorite jam or jelly. I was impressed with this recipe and how easy it really is.

Instant Pot Directions: (oven and microwave instructions below)

  1. Grease the Instant Pot safe pan with coconut oil to prevent sticking.

  2. In a mixing bowl, combine the firm peanut butter, eggs, and baking powder. Stir well until the ingredients are fully blended and form a smooth batter.

  3. Pour the peanut butter batter into the greased pan, spreading it evenly.

  4. Cover the pan with a piece of foil to prevent condensation from dripping onto the bread.

  5. Add a cup of water to the Instant Pot and place the trivet inside.

  6. Carefully place the pan with the peanut butter batter on the trivet inside the Instant Pot.

  7. Close the Instant Pot lid, set the valve to "Sealing" position, and select the "Pressure Cook" or "Manual" mode.

  8. Set the cooking time to about 30-35 minutes on high pressure.

  9. Once the cooking time is complete, allow the Instant Pot to naturally release the pressure for about 10 minutes before performing a quick release to release any remaining pressure.

  10. Carefully remove the pan from the Instant Pot and let the peanut butter bread cool before slicing and serving.
