Instant Pot Fire Roasted Black Bean Chili

My sister, Sharon Walker and I did this recipe together, and I am not the spice queen she  is by a long shot. I like mild she however, well she loves it blow your head off  hot. Well This black bean chili is in between medium heat and hot, but what amazed me the most was how incredible it really was/is.  Serve it with warm crispy tortilla's, cheese and sour cream. I try all foods, and decided I wasn't  going to let the heat get me to "not try it" I am so glad I did. it was honestly amazing. If you don't want the heat though, add mild fire roasted chili's. You won't be disappointed either way!

Pinch tops off green chili's, pinch most the seeds out. Cut into Chunks (all but one) leave it whole.

Add Black Beans, whole chili, pork and 6 cups water. High pressure 45 minutes, with an instant release.

Once your pressure valve has gone down, open lid away from you and add chopped chili's, 2 cups water, chili powder, dry roasted garlic and herb, tomato paste, diced onion, diced bell pepper, salt and pepper.

Mix Well, and place your lid back on, press manual for 6 minutes high pressure. Instant release. Wait till pressure Valve goes  down and open lid away from you, and as always

You Will Need

1 pound black beans

1/2 pound garlic and herb pork tenderloin

8 Cups Water (or chicken broth) divided

7 fire roasted chili's divided

1  8 oz can tomato paste

1 10 oz can Ro-tel

1/2 TBSP pink pink Himalayan salt 

1/4 cup diced onion

1/4 cup diced bell pepper  (we used  red, yellow and green to make 1/4 cup total.)

2 Heaping TBSP Chili Powder

1 TBSP Dry Roasted Garlic and Herb

1/2 TBSP Pepper

Optional- Sour Cream, Cheese, Warm Tortilla's

Directions
