  • In large skillet or deep pot, mix diced chicken and oil,

  • Add Italian seasoning, salt, pepper, minced garlic, and red pepper flakes until fully cooked.

  • Add tomatoes and remaining vegetables until vegetables are soft and well cooked.

  • When vegetables are done to your liking, drain half the juice.

  • Next add cream cheese, and Parmesan Cheese until cheese has fully melted.

  • Mix corn starch and water, and stir until desired thickness

  • Pour into a casserole dish

  • Add shredded cheese and Mozzarella (coating top evenly)

  • Broil for 5 minutes (or until golden brown)

Note: Serve over  Linguine pasta, Penne, or Spaghetti Squash for an AMAZING dish!

Note: Fold with a whole wheat tortilla for a beautiful healthy burrito.  Also you can add your favorite vegetables, you don't have to use the ones listed. (although those are wonderful!)

To store creamy chicken bake properly, follow these steps:

  1. Cooling: Allow the creamy chicken bake to cool down to room temperature after baking. Leaving it on the counter for too long may encourage bacteria growth, so it's essential to refrigerate it promptly.

  2. Storage Container: Transfer the cooled creamy chicken bake to an airtight container or airtight casserole dish with a fitted lid. Make sure the container is clean and dry before adding the food.

  3. Refrigeration: Place the covered container in the refrigerator. Creamy chicken bake can be stored in the fridge for up to 3-4 days.

  4. Labeling: It's a good practice to label the container with the date to help you keep track of when the dish was prepared.

  5. Reheating: When you're ready to eat the leftover creamy chicken bake, reheat it in the oven or microwave until it's thoroughly heated to an internal temperature of 165°F (74°C) to ensure food safety.

  6. Freezing (Optional): If you have a substantial amount of leftovers or won't be able to consume them within a few days, you can freeze the creamy chicken bake for longer storage. Place the cooled bake in a freezer-safe, airtight container, and it can be kept frozen for up to 2-3 months.

  7. Thawing Frozen Creamy Chicken Bake: When you want to use the frozen creamy chicken bake, move it from the freezer to the refrigerator and allow it to thaw overnight. Then, reheat it following the same methods as for refrigerated leftovers.

Remember to always use clean utensils when serving the creamy chicken bake and avoid leaving it at room temperature for an extended period. Properly storing and reheating the creamy chicken bake will help maintain its quality and safety.
