You Will Need

1 small yellow Squash

1 small zucchini 

1 small onion

1 8oz Sugar Snap Peas

4 boneless chicken breast cut into cubes
1 Tbsp Italian seasoning
1/2 to 1 tsp pepper 
2 tsp salt
2 Tbs 
minced garlic 
1 Tbs crushed red pepper flakes
1 1/2 8oz Package cream cheese 
1/3 cup Shredded cheese

1 and 1/3 cup Parmesan Cheese

1 Cup Shredded Mozzarella Cheese
1 14.5 oz can Fire Roasted Diced Tomato's (drained)
1 bag Pepper Stir-fry

1 Small Bag Frozen Broccoli
2 Tbs olive oil

1 TBSP Corn Starch

1 TBSP Water

The main ingredients for creamy chicken bake typically include boneless, skinless chicken breasts or thighs, a creamy sauce (often made with ingredients like heavy cream, sour cream, or Greek yogurt), cheese (such as mozzarella or Parmesan), and various seasonings to enhance the taste.

Directions

  • In large skillet or deep pot, mix diced chicken and oil,

  • Add Italian seasoning, salt, pepper, minced garlic, and red pepper flakes until fully cooked.

  • Add tomatoes and remaining vegetables until vegetables are soft and well cooked.

  • When vegetables are done to your liking, drain half the juice.

  • Next add cream cheese, and Parmesan Cheese until cheese has fully melted.

  • Mix corn starch and water, and stir until desired thickness

  • Pour into a casserole dish 

  • Add shredded cheese and Mozzarella (coating top evenly) 

  • Broil for 5 minutes (or until golden brown)

Note: Serve over  Linguine pasta, Penne, or Spaghetti Squash for an AMAZING dish!


Note: Fold with a whole wheat tortilla for a beautiful healthy burrito.  Also you can add your favorite vegetables, you don't have to use the ones listed. (although those are wonderful!)
