Instant Pot Chicken With Onions and Mushroom Gravy

This Chicken and gravy is different, made with Thyme and Paprika. Browned, and then mixed with gravy/sauce mushrooms and onions, and a secret ingredient, okay so it's not so secret, but it sure is good! Serve over mashed potatoes or rice. Shred your chicken or leave whole. YUM!

How do you keep your chicken Moist?

1. Coat your chicken in olive oil, not only does this allow your spices to stick to your chicken, but it also will make your chicken moist and tender.

2.Avoid Over Cooking

Cut Chicken thighs/legs apart.  Tip: They are easier to cut when half frozen. (If using Chicken Breast skip this step)

To a large bowl add olive oil, Sherry, thyme, paprika, salt and pepper. Mix well.

Add Oil to your Instant Pot, press saute. When it is getting hot, add your chicken to a large bowl, and pour marinade over chicken. (mix well to coat all pieces well) Add 4 pieces at a time to your instant pot and brown on both sides (about 5 or 6 min per side)


When all chicken is done, move to a large plate (set aside) At this point you can shred it or leave it whole. Turn your saute on add half chicken broth, dice large onion and drain mushrooms. Add to your instant pot with minced garlic. Saute until almost translucent. (remove from instant pot and set aside) add your chicken back to your instant pot with half of your chicken broth, place your lid on, and set your timer for 25 min with an instant release. 


Turn your saute on, Add 1 cup water, gravy Browning Seasoning, Salt and Pepper Mix well. Make corn starch slurry and add to your instant pot, stir until desired thickness, Remove inner pot and add 1 cup cream. Salt and Pepper to taste.


Serve with mashed potatoes

or or over rice Yum!

You Will Need

For the Marinade:

1/2 cup Olive Oil

1/2 cup Sherry

1 TBSP Thyme

2 tsp paprika

1 1/2 tsp Salt

1 tsp Pepper

For the Chicken:

8  chicken thighs/legs mixed (cut) You can also use chicken Breast.

2 Cups Chicken Broth (Divided)

1 Cup Water

1/4 tsp Browning Seasoning

1 1/2 tsp Salt

1 tsp Pepper


2 Heaping TBSP  Corn Starch

2 1/2 TBSP Water

1 Cup Cream

Note: for thicker gravy use 3 Tbsp corn starch and 3 tbsp water.
