Best Stuffed Mushroom Recipe easy- These Stuffed Portobello Mushrooms go so fast you might want to make a double batch. A robust mixture of stuffing, chicken, and  cheese fills juicy mushrooms in this recipe. This stuffed mushroom recipe makes 4 and they are absolutely delicious!

You Will Need

  • 4 portable mushrooms

  • 2 boxes chicken stuffing mix (we like those left overs!)

  • 6 Chicken breast

  • 4 Table Spoons Butter (divided)

  • 2 Cups Chicken broth (or water)

  • 2 ts Garlic Powder

  • 2 ts Basil

  • 2 ts Onion salt

  • 2 ts Parsley

  • 2 ts salt

  • 2 ts pepper

  • 1 ts celery salt

Chicken Breast- 

 

  • Mix all spices together,

  • Sprinkle both sides of chicken breast.

  • Put your trivet down into your instant pot 

  • Add 2 cups chicken broth.

  • Place chicken on trivet (if you have to stack them it's okay.)

  • Manuel button 15 min pressure. Wait 10 min after timer goes off, and quick release.

  • Pull chicken breast out, and dice (We only used 3 breast but made extra for BBQ chicken the next day.)


Stuffing-

Make according to package directions. 

Putting it all together-

 

  • Mix your chicken with your stuffing,

  • Use a large spoon make rounded balls about the size of an orange.

  • Place stuffing on mushroom top (we had extra stuffing left over, but this is perfect for us as my husband doesn't like mushrooms) so it's good left overs for him.

  • Place each mushroom on your trivet,

  • Manuel 3 min, quick release.

  • When you pull off your lid, sprinkle desired amount of cheese on tops.

  • Cover with lid and let stand 2 min. 

  • Enjoy!
