This seriously is the BEST Chicken Parmesan you will ever have and it's so easy! Tender crispy chicken thighs breaded in parmesan seasoned Seasoned Bread Crumbs then topped with our Marinara sauce and shredded Parmesan cheese. No soggy chicken parmigiana here! You Will Need

4 Chicken Thighs

1/2 cup Real Mayonnaise 

1/4 tsp Pepper

1/2 tsp Italian Herb Squeezable Kind (or Italian seasoning)

1/2 tsp Basil (squeeze tube) or Dry basil

1/4 tsp Salt

1 cup seasoned bread crumbs

1 Cup Shredded Parmesan Cheese (or more)

Chicken parmesan, also known as chicken parmigiana, is a classic Italian favorite. This dish originated from Italian immigrants in the US in the ’50s and is thought to have originated from Eggplant Parmesan, a traditional Italian dish. Chicken Parmigiana (Pollo alla parmigiana in Italian) is also known in Australia as a Parm, Parma, or Parmi

It’ll look like you spent hours in the kitchen, with a fraction of  the time. 

While it is traditionally deep-fried or often pan-fried, this baked chicken parmesan is baked with an incredible outcome. (Restaurant Style) 

The chicken comes out tender and juicy, and tastes like it came from a Restaurant, when actually, it's homemade.

How to make crispy Baked
Chicken Parmesan (Parmigiana)

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or lightly grease it.

  • In a mixing bowl, combine the seasoned bread crumbs and shredded Parmesan Cheese. Mix them well to create a flavorful coating for your chicken thighs.

  • In another bowl, add the Real Mayonnaise, Italian Herb Squeezable Kind (or Italian seasoning), basil, salt, and pepper. Mix these ingredients until they are well combined.

  • Take each chicken thigh and season both sides evenly with salt and pepper.

  • Coat each chicken thigh generously with the mayonnaise mixture, ensuring that all sides are covered.

  • Dip each mayonnaise-coated chicken thigh into the breadcrumb and Parmesan mixture, pressing the coating onto the chicken to adhere it securely.

  • Place the coated chicken thighs on the prepared baking sheet, leaving some space between them.

  • Bake the chicken thighs in the preheated oven for 45 minutes, turning them over halfway through the cooking time to ensure even browning.

  • After baking, switch the oven to broil mode. Broil the chicken thighs for 4 to 5 minutes on each side or until they are beautifully golden and crispy. Keep a close eye on them to prevent burning.

  • Once the chicken thighs are done and crispy, remove them from the oven.

  • Top each chicken thigh with a generous spoonful of Marinara Sauce and an extra sprinkle of Parmesan Cheese.

  • Return the chicken thighs to the broiler for a minute or two, just until the cheese is melted and bubbling.

  • Remove from the oven and let them cool for a moment.

  • Serve your Crispy Parmesan-Crusted Chicken Thighs with a side of pasta, salad, or your favorite vegetables, and enjoy your delicious homemade meal!

Variations of Crispy Baked
Chicken Parmesan (Parmigiana)

Garlic and Herb Infusion:

Add minced garlic and a variety of fresh herbs like parsley, thyme, or rosemary to the mayonnaise mixture for a burst of flavor.

Savory Mustard Twist:

  • Instead of mayonnaise, use Dijon mustard mixed with a bit of honey for a tangy and slightly sweet coating.

Smoky Paprika:

  • Enhance the breadcrumb mixture with smoked paprika for a smoky, earthy flavor.

Make-Ahead Crispy Parmesan-Crusted Chicken Thighs for OAMC Freezer Meals

Prepare the Chicken Thighs:

  • Season both sides of the chicken thighs evenly with salt and pepper.

  • Coating Preparation: In one bowl, mix together the Real Mayonnaise, Italian Herb (or Italian seasoning), basil, and additional pepper if desired.

Breadcrumb Mixture:

  • In another bowl, combine the seasoned bread crumbs and shredded Parmesan cheese. Mix well to create a flavorful coating.

Coat the Chicken:

Dip each chicken thigh into the mayonnaise mixture, ensuring that it's evenly coated on both sides.

Breadcrumb Coating:

After coating with the mayonnaise mixture, dip each chicken thigh into the breadcrumb and Parmesan mixture, pressing the coating onto the chicken to adhere it securely.

Flash Freeze:

Place the prepared, uncooked chicken thighs on a baking sheet lined with parchment paper, making sure they are not touching each other. Put the baking sheet in the freezer and allow the chicken thighs to freeze individually for about 1-2 hours. This step prevents them from sticking together when stored.

Wrap Individually:

Once partially frozen, remove the chicken thighs from the baking sheet and wrap each thigh individually in plastic wrap or aluminum foil.

Store in Freezer Bags:

After wrapping, place the individually wrapped chicken thighs in a large freezer-safe resealable bag. Squeeze out as much air as possible before sealing.

Label and Date: Label the bag with the date and any cooking instructions.

Freeze:

Place the bag in the freezer. These uncooked, frozen chicken thighs can be stored for up to 2-3 months.

To Cook from Frozen:

Preheat your oven to 350°F (175°C).

Remove the desired number of chicken thighs from the freezer, unwrap them, and place them on a baking sheet lined with parchment paper.

Bake for approximately 35-45 minutes, turning them over halfway through the cooking time, or until they are cooked through, the internal temperature reaches 165°F (74°C), and the coating is golden brown and crispy.

Serve your Crispy Parmesan-Crusted Chicken Thighs with marinara sauce if desired.

By following these instructions, you can enjoy the convenience of a homemade freezer make-ahead meal that's ready to cook whenever you need it.
