Caramel Apple Parfait

You Will Need

For the Pie Filling-

6 Medium Apples Peeled, cored and sliced. 

1 Cup Packed Brown Sugar

4 Tbsp Melted Butter

1 tsp Cinnamon

1/2 tsp nutmeg

3 Tbsp Lemon Juice

3 Tbsp Corn Starch

3 Tbsp Water

1 tsp Vanilla

8 Caramel 

12 Vanilla Yogurt

1 Cup Water

For the Caramel Topping

8 Caramels

1 tsp Butter

1 tsp cream

This dessert is light and refreshing with a caramel apple filling. You can use homemade sweet yogurt with vanilla, or when in a pinch great value vanilla yogurt. Either way this recipe is divine and so easy to do, ready in about 20 min start to finish with out of this world results. Need more yogurt in your life? This is it! Great for breakfast too. make the night before and devour when you wake up for a simple and fast breakfast.

Start by adding Lemon Juice to your instant pot. Slice and peel each apple, I cut mine in 4 then in 2 or 3 wedges, swirl slices in lemon juice after each one. (Keeps your apples from browning.)


Add brown sugar, melted butter, cinnamon, nutmeg, vanilla, 8 unwrapped caramels, and 1 cup water.  Place your lid on, make sure you are on sealing and not venting, press manual (or pressure cook) set timer for 1 minute with an instant release.


While your waiting your minute, mix 3 TBSP corn starch and 3 Tbsp Water together, mix well.


This caramel apple pie filling can be used in so many ways, I love yogurt, but my husband can't stand it, so I made a amazing parfait with mine and he put his over vanilla ice cream.  Okay so when your timer goes off, instant release and add corn starch mixture, stir until thick, and then remove inner pot from your instant pot and let cool on a hot pad on the counter for a few minutes.


In another bowl add 8 caramels (unwrapped) 1 tsp butter, and 1 tsp cream. Microwave for 1 minutes (stirring ever 30 sec until melted) Mix extremely well until smooth.


To Layer Parfait-

Cover bottom in honey almond granola (about a teaspoon or 2) then apple pie filling, then yogurt, repeat..  Top with a spoon full of pie filling, then swirl melted caramel on top, add a pinch of honey, almond granola.
