
BBQ Meatloaf

Looking for a great Hamburger recipe for your next dinner? This BBQ Meatloaf is perfect! I used Thyme in this meatloaf recipe which brought it over the top in flavor. Try it with our Ranch style Mash Potatoes, and Beefed up Green Beans. Supper is easy tonight!~ YUM!~
For The Mashed Potatoes
2 Pounds Ground Beef
2 packages Saltine Crackers
1 Medium Onion (diced)
1 8oz can of Tomato Sauce
3 Eggs
1 TBSP Minced Garlic
1 Tsp Italian Seasoning
1/2 tsp Thyme
1/2 tsp Pepper
1 1/2 tsp Salt
1 14.5 oz can Petite Diced Tomatoes (drained)
A couple of Pinches of Basil (topping)
What Goes Well with Meatloaf?
Directions-
1. In a large bowl combine all ingredients (mix until combined)
2. Form loaf on a large cookie sheet, or a deep meatloaf pan. Sprinkle top with a couple of pinches of Basil. Take your fingers and press the top in to make a indent in your meatloaf to hold Barbeque Sauce.
Place in pre-heated oven at 350 degrease, for 45 minutes, remove from oven and use your favorite BBQ Sauce on top. Return to oven for an additional 15 minutes.
Note: If using muffin tins they take less time to cook. You can also flash freeze for an easy dinner anytime. Once in muffin tin flash freeze 1 hour and add to zip lock bag. You can also cook these first then freeze for an easy re-heat and go lunch or meal. Great for meatloaf sandwhiches!
