How do you make Baked Cucumbers?

Elevate your dining experience with a keto side dish that's both satisfying and palate-pleasing, adding a dash of creativity to your low-carb options. 2 to 3 carbs per 1 cup Cucumbers.

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Cucumbers: Peel the cucumbers and cut them into quarters.

Assemble in the Baking Pan: In a 9x13-inch baking pan, start by pouring in the chicken broth, creating a flavorful base. Arrange the cucumber quarters evenly in the pan.

Prepare the Seasoning: In a small bowl, combine the following seasonings: dried basil, dried oregano, dried thyme, dried rosemary, dried marjoram, dried sage, dried parsley, garlic powder, onion powder, red pepper flakes (adjust to your spice preference), add 1/4 tsp salt and black pepper. Mix well until all the herbs and spices are evenly combined.

Season the Cucumbers: Lay the cucumber quarters evenly in your 9x13-inch baking pan. Sprinkle the prepared herb seasoning evenly over the tops of the cucumbers, ensuring they are well coated with the flavorful seasoning mix.

Add Butter: Cut the butter into tablespoon-sized pieces and distribute them evenly over the seasoned cucumbers. This will infuse the dish with rich, creamy goodness.

Baking Time: Cover the baking pan with aluminum foil to lock in flavors and moisture. Place it in the preheated oven and bake for 75 minutes.

Basting Routine: Every 25 minutes, remove the pan from the oven and gently baste the cucumbers with the melted buttery broth. This step ensures even cooking and flavor distribution.

Uncovering the Cucumbers: Around the 37-minute mark, unveil the cucumbers by carefully removing the foil. Allow them to continue baking uncovered, allowing for the development of a golden, caramelized exterior.

Turning the Cucumbers: Approximately 15 minutes before the cooking time is complete, use a spatula to carefully turn the cucumbers over, ensuring both sides absorb the delicious herb-infused butter.

Broil to Golden Brown Tops: When the cucumbers are tender and their tops are golden brown, switch your oven to the broil setting. Place the cucumbers under the broiler for about 6 minutes, or until the tops turn a delightful golden brown. Keep a close eye to prevent burning. Use a fork to flip the cucumbers so that their upper sides are facing up, aiming for a golden brown finish.

Serve and Savor: Carefully remove the baking pan from the oven. Just before serving, drizzle some of the flavorful broth over the cucumbers. This final touch enhances the dish's taste and presentation.

Enjoy your herb-infused buttered cucumbers with golden brown tops as a delightful side dish.

To store and reheat your herb-infused buttered cucumbers: Storing:

Storing:

Allow the dish to cool to room temperature.

Transfer the cucumbers and any remaining broth to an airtight container. If there's too much liquid, you can strain some of it out before storing.

Seal the container and refrigerate. These cucumbers are best when consumed within 2-3 days to maintain their texture and flavor.

Reheating:

Preheat your oven to 350°F (175°C).

Place the refrigerated cucumbers and broth in an ovenproof dish or baking pan.

Cover the dish with aluminum foil to prevent moisture loss.

Heat in the oven for about 15-20 minutes, or until the cucumbers are heated through. The exact time may vary based on your oven and the quantity of cucumbers.

Remove from the oven and serve while hot.

Alternatively, you can reheat smaller portions in the microwave. Place the cucumbers and broth in a microwave-safe container, cover with a microwave-safe lid or microwave-safe plastic wrap, and heat in 30-second intervals, stirring in between until heated to your liking.

Remember that reheating may slightly soften the cucumbers, but they should still retain their flavor. If needed, you can adjust the seasoning or add a touch of fresh herbs before serving to refresh the dish.

Baked Cucumber Variations:

  1. Cheesy Cucumbers: Before baking, sprinkle shredded Parmesan, cheddar, or mozzarella cheese over the cucumbers. The cheese will melt and create a delicious, gooey topping.

  2. Lemon Zest: Add a fresh and zesty twist by incorporating lemon zest or a squeeze of lemon juice into the butter and herb mixture. Lemon complements the flavors beautifully.

  3. Dill and Yogurt: For a refreshing twist, mix chopped fresh dill and a dollop of Greek yogurt into the herb butter. This adds creaminess and a hint of tanginess.

  4. Garlic Lovers: If you love garlic, increase the garlic powder in the seasoning mix, or add minced fresh garlic to the butter mixture for an extra kick of flavor.

  5. Balsamic Glaze: Drizzle a balsamic glaze over the baked cucumbers just before serving. The sweet and tangy notes will elevate the dish.

  6. Herb Medley: Experiment with different herbs like fresh basil, cilantro, or tarragon in addition to or in place of the Italian herb seasoning. Fresh herbs can bring vibrant and unique flavors.

  7. Spicy Kick: If you like a bit of heat, increase the red pepper flakes in the seasoning mix or add a pinch of cayenne pepper for some spice..

  8. Fresh Cherry Tomatoes: Add halved cherry tomatoes to the baking dish alongside the cucumbers for a burst of freshness and color.
