Baked Caramel Apple Pies
You Will Need
For The Pie Crust
3 Cups Flour (divided)
2 Sticks Unsalted Butter
1 Cup plus 2 TBSP Ice Water
1 TBSP Sugar
For the Pie Filling-
12 Medium Apples Peeled, cored and diced.
1 Cup Packed Brown Sugar
4 Tbsp Melted Butter
1 tsp Cinnamon
1/2 tsp nutmeg
3 Tbsp Lemon Juice
3 Tbsp Corn Starch
3 Tbsp Water
1 tsp Vanilla
15 Caramels
1 Cup Water
For the Caramel Topping
8 Caramels
1 tsp Butter
1 tsp cream
Cinnamon Sugar Mixture
1 tsp Cinnamon
1 Table Spoon Sugar
Extra
4 TBSP melted butter
olive oil spray

The best caramel apple filling. This recipe is divine and so easy to do. Great for, get together, or parties. Heck, you don't even need a special occasion for this one. The pie crust is crazy flaky, They are so crispy you would never know they were baked, this is one you got to try to believe!
In your food processor, add half of your flour, cold butter diced, and half of your ice water, pulse until crumbles form (as shown) add the rest of your water and pulse until it starts to form a ball, remove to a bowl and form ball. Cut ball in half, and cover with saran wrap. Refrigerate for 30 minutes or over night (I did mine over night)




Start by adding Lemon Juice to your instant pot. Slice and peel each apple, I cut mine in 4 then in 2 or 3 wedges, swirl slices in lemon juice after each one. (Keeps your apples from browning.)

Add brown sugar, melted butter, cinnamon, nutmeg, vanilla, 8 unwrapped caramels, and 1 cup water. Place your lid on, make sure you are on sealing and not venting, press manual (or pressure cook) set timer for 1 minute with an instant release.

While your waiting your minute, mix 3 TBSP corn starch and 3 Tbsp Water together, mix well.

In another bowl add cinnamon, and sugar mix well.

In another bowl add caramels (unwrapped) 1 tsp butter.Microwave for 1 minutes (stirring every 30 sec until melted) Add cream, Mix extremely well until smooth.

On your counter, Flour Surface, take out one of the pie crust you refrigerated, press with your hands to make a flat circle, roll out with a heavy roller to 1/4 inch thick. Use the back of your hand pie mold to cut even circles. Lay circles in your hand pie mold, and fill each one with 1 tsp caramel apple pie filling. Close to form pies.


Spray cookie sheet with olive oil spray, melt extra butter and brush each top with butter, Bake at 350 for 22 min, turn pies over and bake an additional 6 minutes. Remove from oven, brush with more melted butter, and sprinkle generously with cinnamon sugar mixture. Drizzle Caramel mixture over the tops. These are the best pies I have ever made/had! Enjoy!~!
